The gristmill this pond was dammed for is long gone; the current owners chose not to restore the site to any one century and instead teach all of them at a table. Archaeology turned up the mill foundations and also Jeremiah Wallace, a Black farmer and real estate broker who bought the place in 1894 — a discovery that reshaped the whole interpretation. Classes run on yaupon, the Indigenous tea, on spoonbread and Johnny cakes, and on the native plants that made the recipes possible.
