Matchaful’s Williamsburg café already sold the drink; the Ritual Bar next door, carved out of an apartment building, teaches the making of it — guided tastings, whisking ceremonies, the slow business of the chasen against the bowl. The room is done in wabi-sabi restraint so nothing competes with what your hands are doing, which is the whole argument for a tea room and rarely the reason one gets built.
