Kanesa Katsuobushi Shoten

An 1882 Nishi-Izu workshop that still smokes bonito over an open fire in a deep pit

Kanesa Katsuobushi Shoten has made katsuobushi since 1882, and still smokes the fish by the tebiyama method, over an open wood fire at the bottom of a pit about two metres deep. Months of smoking, mold-ripening and sun-drying turn the fillets into something as hard as wood. The shop sells whole blocks and ready-shaved packs through a Japanese-language online store.
